Sadly, we have nothing on Utah.  We had a book on Utah post offices, but it is out-of-print.  A possible monograph would be the railroad camps along the Transcontinental Railroad.  If you have documents or photos from railroad camps that could be used in this monograph, we would like to hear from you.
